Spring Lamb Burgers topped with Clandeboye yoghurt dressing

Enjoy these home-made burgers al fresco!

Ingredients

Burger

1lb lamb mince
1 small red onion
1 garlic clove crushed
1 teaspoon ground coriander seeds
1 teaspoon ground cumin seeds
1/2 teaspoon of chopped red chilli
1 teaspoon of chopped mint
salt and pepper

Yoghurt dressing

1 tomato deseeded – peeled & diced
1/2 cucumber deseeded – peeled & diced
1 tablespoon chopped mint
1 teaspoon of honey
4floz Natural or Greek Clandeboye Yoghurt

For the Burger

1. Put lamb, onion, herbs and spices into bowl and mix
2. Season and portion into 4oz burgers
3. Fry or grill on both sides until just cooked this should take around 7 minutes

For the Yoghurt dressing

1. Simply mix all ingredients in a bowl, taste and season

Serve burger with green salad – toasted pitta bread, yoghurt dressing and mixed olives
